So my first question is why did you want to take over this establishment?" Paco ZYTOMIRSKI: "You should know that Vicky is a restaurant that has existed in Paris under different names and different forms for fifteen years in the 17th arrondissement; originally it was one of the first kosher restaurants to exist in the West-Parisian neighborhood at a time when there were very, very few kosher restaurants. Vicky very quickly became an icon for the quality of its grilled meats. Through different owners, I found myself 5 years ago with a desire to expand my skills and professions. Completely by chance, I found myself faced with the possible takeover of the restaurant; very quickly I became the main and daily actor of this restaurant. To be honest, at the start I really thought I would only be an investor." Romane HASSOUN: "If I understand correctly, you haven't always been in the food industry?" Paco ZYTOMIRSKI: "Personally not at all, but for the anecdote, in 1934 my paternal grandfather opened one of the first kosher butcher shops in Paris. I think it was in my genes and it's no coincidence that I found myself in the meat business today." Romane HASSOUN: "Very nice little anecdote! Tell me Paco, what makes the strength of the restaurant today, how does it stand out from other restaurants in Paris?" Paco ZYTOMIRSKI: "One of the primary strengths of the restaurant is its conviviality; it’s a place where people like to come with friends or family. People look for an atmosphere, they come to meet a friend, it’s always a friendly environment at Vicky. Of course, going out is a social need but it’s not enough, we also have to ensure that we will eat well. The second strength of the restaurant is the quality of the grills and the meat, and the third is everything surrounding Shabbat, as can be seen in the report." Romane HASSOUN: "Ah yes, I saw that on your website you offer several Shabbat packages?" Paco ZYTOMIRSKI: "Shabbat at Vicky is a real institution with a diversity of dish offerings: caramelized chicken drumsticks, cumin meatballs, homemade couscous, harissa wheat, pkaila, nikitouche, the gnaouia which is our specialty... These are mostly Tunisian dishes. Our formula is very competitive with 7 kemias offered for free and with us, it’s always very generous!"
